Farmer Sausage Stuffed Red Peppers


These are very tasty stuffed peppers and quite different from the 'traditional' rice stuffed peppers you can find.
I first came up with this stuffing for putting into portabella mushrooms but we loved it so much I tried it again but this time in peppers.

Farmer Sausage Stuffed Peppers
4 Sweet Red Peppers
1 package Winkler Farmer Sausage (contains 2 large sausages)
1 package button mushrooms
6 cloves of garlic, chopped finely
2 Tbls heavy cream (or Half and Half)
1/4 cup rice (basmati or white work best
1/4 cup panko bread crumbs
Drizzle of olive oil

Preheat your oven to 350ºF

1. First prepare the peppers by slicing a thin slice off the bottom. You're not going through the pepper but just giving yourself a level base so they don't tip over while you're filling or cooking them. Next, slice off the tops of the peppers and clean our the inside, throwing away the seeds and white ribs. Don't throw the top of the peppers away, only the stem. Place the peppers in the roasting pan you will use for cooking.

2. Put a large pan on medium heat and break up the farmers sausage into small pieces in the pan. You do not need any oil in the pan, the farmer sausage has enough in it. Start cooking/browning the farmer sausage.

3. While the farmer sausage is cooking, chop your mushrooms into larger pieces and put into the pan with the cooking farmer sausage. Also, chop your garlic and put that in as well. It may seem like a crazy amount of garlic but when your baking the peppers that garlic cooks down a lot.

4. Cut up the top pieces of the peppers that you saved and throw them into the pan as well to cook. Give the pan a stir everyone few minutes to keep things cooking evenly.

5. Once the farmer sausage is cooked and the mushrooms have browned and lost most of their moisture, put in the rice and mix together. Season with pepper - no salt!

6. Stuff each pepper evenly with as much stuffing as you can without it falling out. Top with the panko and drizzle the tops with a little olive oil - this will help to brown the tops. Cover with foil and place in the oven. Bake for 30 minutes, remove foil and continue baking for 15 minutes.
