BBQ Chicken Mac and Cheese
Ok Folks, here is a great new recipe!
I hope you like it as much as we did here.
It's a spin on a typical mac and cheese. I've used BBQ chicken seasoning to add a fun bit of flavour to the traditional mac and cheese. I've also cut out some unneeded calories but kept all the oooey gooey cheesiness that you expect in a good mac and cheese! Please enjoy!
BBQ Chicken Mac and Cheese
6 Chicken thighs (4 chicken breasts OR a rotisserie chicken)
1 lb shell or spiral noodles
1/4 c butter
1/4 c flour
1 370ml can of evaporated milk
1/4 c water
3/4 grated cheese (pick a gooey cheese - I've listed a bunch of good melting cheeses below)
2 t Chicken Grilling Spice
1 c frozen peas
1 c frozen corn
salt and pepper to taste
Directions
*Skip step one if you are using a rotisserie chicken
1. Put on a large pot of water and bring to a boil. Add you chicken and cook for 20 minutes or until cooked through. Remove the chicken and put aside to cool slightly.
2. While chicken is cooking, put butter and flour into a medium size sauce pot and melt on medium heat. Once the butter is melted, cook flour and butter mixture until it starts to smell nutty (1-2 minutes) but not brown. Slowly whisk in the evaporated milk - whisk constantly to avoid lumps. Add water and Chicken grilling spice. Bring back up to a boil and cook for 1-2 minutes. If the mixture is too thick at this point add a scoop of water from the chicken/noodle pot. Take the sauce off the heat and stir in the cheese. The remaining heat will easily melt the cheese. Taste - adjust the salt and pepper to your liking. You are going to want it to be slightly salty since the noodles will tone down the salt flavour.
3. Using the same pot you cooked the chicken in (or a new pot if you have a rotisserie chicken), add your noodles and cook according to the package.
In the last 3 minutes of cooking add the peas and carrots to the same pot.
4. Shred your chicken and put into a large bowl, add noodles, peas, corn and cheese sauce. Mix until combined and serve.
