Instant Pot Cauliflower Chowder (Keto)
A delicious, creamy, and incredibly simple chowder that everyone will love!
Ingredients
- 1 medium sized head Cauliflower
- 2 - 2.5 cups Chicken Stock
- 1-2 chunks Parmesan Rinds
- 1/2 cup Heavy Cream
- 2 cups Cheese, grated
- salt and pepper to taste
- 6 slices chopped, cooked, bacon (optional)
- 2 cloves garlic, finely chopped
- 1/2 cup onion, diced
Instructions
Cut cauliflower into large chunks, dice onion, finely dice garlic, and grate cheese. Cook bacon if using
Put cauliflower, chicken stock, onion, garlic, and parmesan rinds into the instant pot. Close lid and cook using the manual function for 5 minutes (on the stove, cook for 15 minutes or until very soft and tender)
When 5 minutes has ended, manually release the pressure on the instant pot. Once the pressure has been released, open the lids and pull out what's left of the parmesan rinds
Using an immersion blender, blend the soup until completely smooth. Add cheese and cream and stir until combined (add more stock if it's too thick). Season with salt and pepper to taste
Serve warm in bowl topped with your favourite toppings.
