Pan-Fried Tofu with Asian Garlic Sauce

This is a recipe that has been getting a lot of requests lately.
It's from the Canadian Living - Make It Tonight cookbook. It's really easy and SUPER tasty.
Also, it's a nice thing to make for Meatless Monday - something we do at our house.

So here's the recipe and in brackets and green are a few things I've changed

Pan-Fried Tofu with Asian Garlic Sauce
1 pkg (350g) extra-firm tofu
2 Tbsp vegetable oil
1 onion chopped
3 cloves garlic, minced (6 cloves garlic minced)
1 tsp minced fresh ginger (2 Tbsp, 1 inch piece of ginger)
1/4 tsp pepper
3/4 c vegetable stock
1/4 c soy sauce (I like reduced sodium)
1 Tbls cornstartch
2 green onions diagonally sliced

Pat tofu dry; cut crosswise into 4 slices. In large skillet, heat half or the oil over medium-high heat; fry tofu, turning once and adding more oil if necessary, until golden, about 8 minutes.

Add remaining oil to pan; fry onion, garlic, ginger and pepper over medium heat, adding more oil if necessary, until onion is softened, about 3 minutes (Don't cook the onion toooooo much, it's nice to have some crunch left in it)

Add broth and soy sauce; bring to boil. Stir cornstarch with 1 Tbsp water; stir into pan. Boil, stirring, until thickened, 1 minute. Pour over tofu sprinkle with green onions.

Enjoy!!
