Super Delicious Homemade Salmon Burgers

Salmon is such a great fish to use for burgers, for many reasons. I, personally, love the look of the bright orange flesh flecked with green herby bits. On top of how great it looks it TASTES even better.

This is a recipe I recently came up with and will continue to use in the future. It's a nice combination of small salmon chunks, herbs and lemon mayo :)

Ingredients
2 lbs fresh salmon
4 green onions
1 handful parsley (or cilantro for fans)
2 cloves of garlic, crushed
1 1/2 T soy sauce
1/4 mayo (not miracle whip)
1 lemon
Burger buns (I prefer thin buns but pick whatever you like)

Directions
1. Finely chop 3/4's of the parsley (approx 1/2 cup) and all green onions, zest the lemon and crush or mince the garlic; put everything into a large bowl, gently mix together.
2. Cut about a 1/3 of the salmon off (use the edge bits or pieces that aren't as pretty) and cut into large chunks. Place the chunks into a food processor. Pulse until the salmon chunks have become a  course paste - about 15 pulses.  Then add to the bowl with the herb mixture.
**Take a look after every few pulses to see what the salmon is looking like. Once you see small pieces, that are just coming together - you're done!
3. Cut the remaining salmon into 1 cm pieces, and add to the bowl with the herbs, garlic and lemon.
4. Add the soy sauce to the large bowl and gently mix everything together, evenly spreading the salmon paste throughout, this will hold the burgers together.
5. Preheat your pan or grill pan (NOT BBQ, they'll break) to medium high heat with some olive or vegetable oil (about 1 T)
5. Form into 4 or 5 even sized burgers and place into preheated pan to cook.
6. Cook burgers through. I know 'cook burgers through' is not very specific but here's my method that works every time!
Place burgers down on first side and don't flip until you see the flesh cooking up the sides. You'll have bright orange tops with a little light orange creeping up from the bottom. Then flip and cook until you have a nice golden crust on the bottom side of the burger. I'm going to try and take some pictures of this so it's easier to visualize. I'll post them when I do.
7. While the burgers are cooking, put the mayo and lemon juice into a small dish and mix together. I also like to add a little sprinkle of finely chopped parsley, but that's up to you.
8. Top the buns, on both sides, with lemon mayo and add your salmon burger. Top with lettuce or any other topping you like.
